FRIED EGGPLANT 
1 lg. eggplant
2 eggs
1 c. Italian bread crumbs
2 c. grated sharp cheese
1 c. Parmesan cheese

Slice eggplant into 1/2" slices, dip into egg and coat with bread crumbs. Fry until crisp. Place cooked eggplant into casserole dish and sprinkle with cheeses. Run under broiler until cheese melts.
