SANTA FE RAILROAD FRENCH TOAST 
2 eggs
1/2 c. whipped cream
Pinch of salt
3 slices of white bread

Trim crust of bread, then cut in half to form triangles.

Combine beaten eggs, whipped cream and salt. Soak bread in egg mixture. Fry soaked bread in vegetable shortening on both sides to a golden color. Transfer to clean towel to absorb excess grease. Then place on baking sheet and allow to puff up in a 400 degree oven for about 3 to 5 minutes. Sprinkle with powdered sugar and serve with applesauce, jelly, honey or maple syrup. Serves 2.
