ZUCCHINI CAKE 
3 cups grated zucchini and rind
3 cups sugar
1 1/2 cups oil
4 eggs
3 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 to 2 tsp. cinnamon
1/2 tsp. salt
1 cup chopped walnuts (optional)

Mix zucchini, sugar, oil, and eggs together. Combine dry ingredients. Mix together well. Add nuts.

Grease and flour angel food or other fluted cake pan. Pour cake mix in pan.

Bake in a 300°F oven for 1 1/2 hours.
