FOOL YOUR KIDS CARROT COOKIES 
3/4 c. butter
1 1/4 to 1 3/4 c. all purpose flour
3/4 c. packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. ground cloves
1 tsp. vanilla
2 c. rolled oats
1 1/4 c. finely shredded carrots

In mixer beat butter on medium to high speed until softened. Add half of the flour, sugars, egg, baking powder, cinnamon, baking soda, cloves, and vanilla. Stir in oats. Add enough flour to make soft dough. Stir in carrots.

Drop by rounded teaspoonful onto an ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes until golden edges. Cool on wire rack. Makes about 4 dozen.
