LUCY'S PARKERHOUSE ROLLS 
1 c. lukewarm water
2 tbsp. soft butter
1 pkg. yeast
1 tbsp. sugar
1 tsp. salt
2 1/2 c. all purpose flour

Dissolve yeast in warm water. Let stand 5 minutes. Add butter, sugar and salt.

Mix in gradually the flour and knead until dough in no longer sticky. Roll out to 1/2" in thickness and cut out with round cookie cutter. Stretch the cut out dough to oblong shape. Dip lower end in melted butter. Place on pan and fold over the top half onto the bottom.

Bake at 375 degrees for 12 - 20 minutes.
