YOKAN 
2 lbs. cooked red beans
8 kantens
10 c. water
6 c. sugar

Soak kantens in water 1 hour. Cook until dissolved. Add sugar and cook at low heat until thickened, constantly stirring. Add salt and cooked mashed red beans. Remove from heat and add few drops of cinnamon extract if desired. Pour in flat pan and cool. When it becomes hardened, cut as desired size and serve.
