|CHEESE TORTELLINI IN TOMATO CREAM|
Cheese tortellini to serve 4, cooked & drained
1/2 c. sliced green pepper
1/2 c. sliced onion
1/2 c. sliced celery
2 fresh tomatoes, diced
1/2 c. sliced mushrooms
1 c. diced ham
1 c. tomato sauce
1/2 c. heavy cream
1 c. chicken broth
2 tbsp. butter
Parmesan cheese, preferably grated fresh
In large skillet saute green pepper, onion, celery and mushroom until just cooked. Add ham and heat through. Stir in tomato sauce, tomato chunks and 1/2 of the chicken broth.
Mix well and simmer on low heat. Warm remaining chicken broth (not too hot) and mix with the cream. Add to skillet; mix well. Simmer for another minute to thicken. Add butter just before serving.
In large bowl, place the tortellini, pour sauce over and mix gently as not to break pasta. Sprinkle Parmesan on top.
