1. In medium bowl, beat cream cheese until smooth. Gradually beta in confectioners sugar. Beat in vanilla. Separate dough into as many parts are you will need, depending on how many colors you will want to use (pastel green, blue, pink look pretty).
2. Refrigerate, covered, at least 1 hour. Shape into balls using a rounded teaspoon of mixture for each.
3. Roll each in coconut, flatten top slightly. Place on cookie sheet covered with wax paper and refrigerate several hours or until firm. Makes about 20.
