MOJO ISLENO SAUCE 
1/4 c. olive oil
2 c. onions, peeled & sliced
3/4 c. water
1 bay leaf
12 Spanish olives, with pimentos
1 tbsp. capers
1 crushed garlic clove
Pimentos, in juice, cut into strips (2 oz.)
1 (8 oz.) can tomato sauce
1 tbsp. vinegar
2 tsp. salt

Mix all ingredients together. Cook on low heat for approximately 1 hour, or simmer on low setting on crock pot.
