Wash zucchini or tomatoes, sliced very thin, round ways. Then mix in a bowl a cup or less of Bisquick or Jiffy mix. Add 1 egg and add a little water or milk to make a medium paste.
Dip your zucchini or tomatoes in batter coating both sides of slices. Have a pan already hot with cooking oil lay your slices in salt and pepper. Both sides lightly fry. Brown and tender.
