|GRILLED ZUCCHINI (Or Eggplant)|
1 zucchini or eggplant, sliced
1/4 c. olive oil
12 fresh basil leaves or 1 tbsp. dried basil
3 inch sprig oregano or 1 tsp. dried oregano
Mix olive oil, basil, oregano and pepper in food processor or blender until pureed. Brush on sliced zucchini or eggplant. Grill until hot, 15-20 minutes, turning every 3-5 minutes and brushing with oil mixture.
