DRIED SHRIMP GUMBO WITH EGG 
1 lg. bag dried shrimp
1 lg. onion
1 lg. bell pepper
Green onion tops
12 raw eggs
Salt and pepper to taste
4 tbsp. roux
2 qt. water

Cut up onion, onion tops and bell pepper. Bring water to boil. Add roux and stir until dissolved. Add onion, onion tops, bell pepper and salt and pepper to taste. Boil for 30 minutes. Add dried shrimp and boil 30 minutes longer. Crack eggs and put into gumbo raw and boil 10 minutes. Serve over rice. 1 can diced Rotel optional.
