|CHEESY MUSTARD CAULIFLOWER|
1 med. head cauliflower (about 2 lbs.)
2 tbsp. water
1/2 c. mayonnaise
1 tbsp. finely chopped onion
1 tsp. prepared mustard
1/2 c. shredded cheddar cheese (2 oz.)
Trim leaves from cauliflower. Leaving head whole, remove as much of core as possible by cutting a cone shaped piece from the bottom of head.
Place cauliflower, stem side down, in 2 quart glass casserole. Add water and cover. Microwave at high setting 12 minutes or until tender.
Let stand on wooden board or heatproof surface 3 minutes to complete cooking. Place cauliflower on serving platter. Combine mayonnaise, onion, mustard and cheese in bowl; mix to blend. Spread mixture over cauliflower.
Microwave at medium setting (50 percent power) 1 minute. Cover with plastic wrap or waxed paper. Let stand on wooden board or heatproof surface 3 minutes, or until cheese melts. Makes 4 servings.
