QUAHOG PIE 
2 qt. large quahogs (2 c. meat)
1 med. onion
4 med. potatoes (2 c. cubed)
1 c. water
1/2 tsp. salt
1/2 tsp. sage
3 tbsp. butter
1 c. milk
4 to 6 common crackers
Salt
Pepper
Paprika

O pen quahogs (remove dark sac), and remove meat. Chop meat coarsely. Combine first 6 ingredients in saucepan and cook until potatoes are just tender. Make roux of flour and 3/4 cup milk. Stir roux into cooked mixture, add butter. Season to taste. Pour into greased baking dish. Soak crackers in 1/4 cup milk until moist. Place crackers on quahog mixture. Dot crackers with butter. Sprinkle paprika over topping. Bake at 400 degrees for 20 minutes.
