BEST CHICKEN & BROCCOLI CASSEROLE 
2 c. cooked chicken, cubed
2 (10 oz.) pkgs. frozen broccoli spears or fresh broccoli equivalent
3 med. onions, cut into wedges
4 tbsp. butter
2 tbsp. all-purpose flour
1/4 tsp. salt & dash of pepper
1 c. milk
1 (3 oz.) pkg. cream cheese
1/2 c. cheddar cheese, shredded
1 c. soft bread crumbs

Cook broccoli, drain and set aside. Cook onions in salt water for 10 minutes. Drain and set aside. In saucepan, melt 2 tablespoons butter. Stir in flour, salt and dash of pepper. Add milk. Stir until bubbly and thick. Add cream cheese, melt. Add onions, broccoli and chicken. Turn into casserole. Melt 2 tablespoons butter. Stir in bread crumbs to coat. Layer bread crumbs over casserole. Top with cheese. Bake at 350 degrees for 35 to 40 minutes until bread crumbs brown and cheese is melted.
