PINA COLADA MUFFINS 
18 oz. box yellow cake mix
1 tsp. coconut extract
1 tsp. rum extract
1 c. flaked coconut
1/2 c. chopped walnuts
1 c. drained, crushed pineapple

Using electric mixer, prepare cake mix according to package directions. Stir in remaining ingredients; mix 1 minute longer. Be careful not to overmix the batter. Grease muffin tins or line with paper cups; fill each cup 3/4 full. Bake in preheated 350 degree oven for 15 to 20 minutes or until a wooden pick inserted in center comes out dry. Makes 30 muffins.
