BANANA OR APPLESAUCE BREAD 
2 c. call-purpose flour
1/2 - 3/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon (for applesauce bread)
1 c. mashed banana or 1 c. applesauce
1 egg or 2 egg whites
1/4 c. vegetable oil
1/4 c. milk

Stir together flour, sugar, baking powder, baking soda, salt and cinnamon in a mixing bowl. Add banana or applesauce, egg, vegetable oil and milk. Stir until well blended. Spoon batter into a greased 9x5 inch loaf pan. Bake at 350 degrees for 1 hour.

(Can substitute 1 cup of whole wheat for 1 cup of the all-purpose flour in this recipe.)
