QUICK CHICKEN LONG RICE 
2 pkg. long rice
1 lb. boneless chicken, in chunks
2 cans chicken broth
1/2" piece ginger
Chopped garlic
Green onions

Soak long rice in hot water 10 minutes. Set aside. Saute chicken in a little broth. Add ginger and garlic. When cooked, add all the chicken broth and long rice. Garnish with green onions. Ono!
