2 c. precooked brown rice
1/2 c. bread crumbs
1 c. mixed veggies (squash, celery, broccoli, etc.) finely chopped
Salt and pepper to taste
3 tbsp. oil
Mix rice, bread crumbs, veggies, and seasonings together. Form patties and fry in oil over medium heat until brown on each side.
