CHICKEN IN CHINESE PLUM SAUCE 
1/4 c. butter
6 chicken breast halves, skinned
1 (16 oz.) can Chinese plum sauce or homemade plum sauce
Salt and pepper

Dot the bottom of a 13 x 9 inch baking dish with butter. Place the chicken breasts, bone side down, in baking dish and spoon plum sauce over all. Bake, basting frequently, at 375 degrees for 30 minutes or until chicken is tender. Serves 4-6.

PLUM SAUCE:

14 oz. can plums, drained and pitted
1/3 c. orange marmalade
3/4 tsp. Tabasco sauce
1 tbsp. soy sauce
1 tbsp. vinegar
1/4 tsp. ground ginger
1 minced sm. garlic clove

Combine all ingredients in blender or food processor. Whirl until pureed. Cover and refrigerate until ready to use. Makes about 1 1/2 cups sauce.
