4 eggs
1 c. buttermilk
2 (6 1/2 or 7 oz.) cans tuna in vegetable oil
1/2 tsp. salt
1 lb. (2 c.) sm. curd creamed cottage cheese
2 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained
1/2 c. chopped onion
1 med. tomato, thinly sliced, or 1/2 c. sliced cherry tomatoes
1/2 c. (4 oz.) shredded Mozzarella cheese

Beat eggs and buttermilk in large bowl. Add tuna, salt, cottage cheese, broccoli and onion. Turn into 2 well-greased 9-inch pie plates or quiche dishes, or 1 (9x13 inch) baking dish. Bake in 300 degrees over for 35 minutes. Top with sliced tomatoes and Mozzarella cheese and continue to bake 10 minutes longer until set. Yields: 8 to 10 servings.
