OATMEAL CAKE WITH COCONUT FROSTING 
1 1/2 c. boiling water
1 c. quick oatmeal
1 c. sugar
1 c. brown sugar
1 1/2 c. shortening or 1 c. butter
1 1/2 c. flour
1/2 tsp. salt
2 eggs

Put oats in boiling water and let stand while mixing other ingredients. Cream sugars and shortening together. Mix dry ingredients. Mix with creamed shortening. Add eggs and oatmeal.

Bake at 350°F for 35-40 minutes. Cool and frost with coconut and nut frosting (below).

FROSTING:

1 cube butter
1 c. brown sugar
1/2 c. milk
1 c. coconut
1/2 c. walnuts
1 tsp. vanilla

Mix together butter, brown sugar, and milk. Cook over medium heat in heavy pan until it starts to thicken. Take off heat and add coconut, nuts, and vanilla. Spread on cake while hot.
