COTTAGE CHEESE SOUP 
4 tbsp. butter
1 tbsp. grated onion
4 tbsp. flour
4 c. milk
1/2 tsp. salt & pepper
2 c. cottage cheese
Pinch of chives or parsley

Melt butter, add onion and cook until onion is clear but not browned. Work in flour, then add milk and cook until smooth and thickened, stirring constantly. Add salt and pepper. Rub cottage cheese through sieve and add to hot liquid stirring until well blended. Serve at once with chives or parsley sprinkled over top.
