ZUCCHINI QUICHE 
1 (9") baked pie shell
2 c. sliced zucchini
1/2 c. chopped onion
1 tbsp. butter
1/2 c. shredded cheese
1 tbsp. flour
1 med. tomato, seeded, chopped (3/4 c.)
6 eggs
1 c. half & half
1/2 tsp. oregano
1/2 tsp. salt
1/8 tsp. pepper

Cook zucchini and onion in butter until brown. Sprinkle zucchini mixture, cheese, flour and tomato in pie shell. Beat together remaining ingredients and pour over. Bake at 375 degrees for 30-35 minutes. Serves 6.
