1 1/2 lbs. stew beef
Brown on medium heat on both sides to seal in juices of meat. When brown, cover with 2 quarts cold water. Bring to boiling on high heat. Add 1 large cut up onion, 6 to 8 carrots, wash, scrape and cut into slices and add to beef. Add 8 to 10 medium potatoes, peel and cut into quarters to beef. Add 2 teaspoon salt and 1/2 teaspoon pepper. Cover and reduce heat to low. Continue cooking 2 to 3 hours until done.
