LEMON MERINGUE COOKIES 
MERINGUE:

6 lg. egg whites, beaten stiff
2 c. sugar
1 tsp. vanilla
Pinch of salt

Add sugar gradually to beaten egg whites while continuing to beat constantly. Add vanilla and salt.

Grease cookie sheet and spoon out batter, using an ice tea spoon. Should make 8 dozen meringues.

Using tip of paring knife, dipped in hot water, make a depression in center of each meringue. Bake in 300 degree oven 20-25 minutes.

LEMON FILLING:

2 c. sugar
4 egg yolks, beaten
3 lemons, juice and grated rind
1/2 c. butter

Melt butter in top of double boiler. Add sugar, lemon juice, and rind to butter. Blend well. Add egg yolks. Cook 45 minutes. Cool. Spoon teaspoonful into each meringue.
