PASTA ALLA NORCINA 
1 lb. sausage, hot, sweet, or mixed
1 onion, chopped
2 tbsp. olive oil
Pepper
1/2 c. grated Parmesan cheese
1/2 pt. heavy cream
1 lb. Ricotta cheese
1 lb. pasta (fettucini or any type of macaroni)
2 tbsp. chopped parsley

In a medium frying pan, add olive oil and onions and saute until browned. Add sausage and pepper and cook thoroughly. Drain all oil and fat from frying pan. Add cream, Ricotta cheese, Parmesan cheese and parsley to the sausage. Cook about 1/2 hour.

Meanwhile, cook the pasta, drain it and place it in a serving dish. Pour sausage and cream mixture over the pasta, add some grated Parmesan cheese to the top and serve. 6 servings.
