COCONUT EGG CUSTARD PIE WITH SELF
CRUST
 
3 tbsp. flour
1 1/4 c. sugar
1 lg. can evaporated milk
2 tsp. vanilla
1 stick butter, melted
3 eggs
1 c. coconut

Mix flour and sugar in a bowl, whip it. Add milk, vanilla, butter and eggs. Mix well. Add coconut. Pour into a greased and floured 9" quiche or pie pan. Bake at 350 degrees for 30 minutes.
