ITALIAN RICE PIE 
1 c. uncooked rice
1/4 tsp. salt
1 lb. Ricotta cheese
6 eggs
1 1/4 c. sugar
1 1/4 c. milk
Grated rind of 1 orange

Follow package directions cook rice until tender but not soft. Cool. In the meantime, thoroughly blend milk and Ricotta. In a separate bowl beat eggs then add sugar.

Mix in the cheese mixture, rice and flavorings. Pour into unbaked 10 inch pie shell. Bake at 450 degrees for 10 minutes. Reduce to 300 degrees and bake for 40 minutes.
