PINEAPPLE WATERMELON PRESERVES 
1 lb. honey
3/4 c. water
1 tsp. salt
1/2 tsp. ginger
Juice of 1 lemon
Rind of 1/2 lemon
1 lb. watermelon rind, cubed
1 c. crushed pineapple

Combine honey, water, salt, lemon juice and rind, ginger, and watermelon rind. Simmer very gently 3 hours. Add pineapple; cook 1 hour longer. Seal in sterilized jars.
