BANANA WALNUT CAKE 
1/2 c. soft butter
1 tsp. vanilla
1 1/2 c. packed light brown sugar
3 eggs
2 1/4 c. sifted all-purpose flour
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1/2 tsp. salt
1 1/3 c. mashed ripe bananas (3 lg. or 4 med)
1 1/4 c. milk
1 c. chopped walnuts

In large mixing bowl, cream butter, vanilla and sugar until light and fluffy. Beat in eggs. Sift together flour, baking powder, baking soda and salt. Mix bananas and milk. Blend dry ingredients into batter alternately with banana mixture. Stir in walnuts. Turn into 2 greased and floured 2-inch deep 8-inch layer cake pans or 2 greased and floured 9-inch layer cake pans.

Bake in 350F oven for 30 to 40 minutes, until cake tester inserted in cake comes out clean. Cool 10 minutes, turn out onto racks and cool completely. Frost with Cream Cheese Frosting.

Makes 1 (8 or 9-inch) layer cake.

CREAM CHEESE FROSTING:

2 pkg. (3 oz. each) cream cheese
3 c. unsifted confectioners' sugar
1 tsp. vanilla

In large mixing bowl cream cheese until smooth. Gradually beat in confectioners' sugar and vanilla; beat until smooth.
