GOURMET PECAN PIE 
1/2 c. very soft butter
1 c. sugar
1 c. dark corn syrup
1/2 tsp. salt
1 1/2 tsp. vanilla
3 eggs
1 1/2 c. coarsely chopped pecans
1 (9") unbaked pie shell

Combine butter, sugar, corn syrup, salt and vanilla. Beat until blended. Add eggs and beat gently until just blended. Fold in pecans. Pour into shell. Bake at 350 degrees for 50 to 55 minutes. Cool on rack.
