COUNTRY - FRIED GREEN TOMATOES 
6 med. green tomatoes, sliced
1 tbsp. sugar
1/2 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. butter

Sprinkle tomatoes with sugar and let stand about 15 minutes. Combine other dry ingredients and coat tomatoes. Melt butter in skillet. Brown tomatoes slowly on both sides. Remove each batch to oven proof platter and keep hot until all tomatoes are cooked. Makes 6 servings.
