OYSTER ROCK-ON-FELLER 
1 dozen big sized oysters (shucked)
1 cup spinach (drained)
1 cup Alfredo sauce (brand of your choice)
1 cup pancetta or prosciutto crumbles
1 cup Parmesan, Romano, etc...shredded cheese
1 12 hole cupcake tin
spray canola or olive oil
1 cup diced chives, green onion or leek

Preheat oven to 350°F.

Spray cupcake tin with the Canola or Olive oil, Put one shucked oyster in each cupcake well. Layer onto the oyster some spinach, Alfredo sauce, pancetta/prosciutto, cheese and chive/onion/leek.

Bake in oven 30 minutes or until cheese browns a little and oyster is bubbling.
