|LIGHTLY GLAZED CARROTS - Microwave|
6 med. carrots, peeled & sliced 1/4" thick
2 tbsp. water
1/4 tsp. salt
2 tbsp. brown sugar
1 tbsp. honey
2 tsp. grated orange peel
1/2 tsp. cornstarch
In 1 1/2 quart casserole combine carrots, water and salt. Cover. Microwave at high 7-8 minutes, or until tender, stirring after 1/2 the cooking time. Set aside.
In small bowl or 1 cup measuring cup combine remaining ingredients. Microwave at high 45-60 seconds or until clear, thickened and bubbly, stirring once. Drain carrots. Pour glaze over and toss to coat. Serves 4.
