RICE WITH PARSLEY 
3 tbsp. butter
2 tbsp. chopped onion
1 c. raw rice
1 1/2 c. water
1 bay leaf
Salt to taste, if desired
Freshly ground pepper to taste
Tabasco sauce to taste
2 tbsp. finely chopped parsley

1. Melt 2 tablespoons of butter in saucepan and add onion. Cook, stirring until wilted. Add rice and stir briefly.

2. Add water, bay leaf, salt, pepper and Tabasco sauce.

3. Bring to boil. Cover and simmer 20 minutes.

4. Add remaining tablespoons of butter and the parsley. Stir to blend. Discard bay leaf and serve. Yield: 4 servings.
