QUICK AND EASY STIR FRY 
Chicken, fish, beef, ham (1 c., chopped into 1/2" to 1" pieces)
Soy sauce
2 tbsp. vegetable oil
2 c. cooked rice

VEGGIES:

2 ribs celery
2 carrots, sliced into 1/4" pieces
1 (4 oz.) can mushrooms, drained
1/2 c. broken pecans
Bell pepper, young sweet peas, any veggie you like (optional)

Heat oil in very large skillet or wok until almost smoking. Add meat and stir quickly. Add 2 tablespoons soy sauce and veggies, stirring constantly for approximately five minutes. Veggies will be slightly crisp. Remove from fire and add to warm rice with 3 tablespoons more of soy sauce. Mix well and serve. NOTE: Do not add salt as soy sauce is very salty. 4 to 6 servings.
