SWEDISH POORMAN COOKIES 
3 tbsp. sugar
3 tbsp. heavy cream
3 egg yolks, well beaten
1/4 tsp. crushed cardamom
1 1/2 c. flour
Pinch salt
Confectioners sugar

Gradually beat sugar and cream into egg yolks. Add cardamom and flour. Mix well. Roll dough about 1/16-inch thick. Cut into strips 1 1/2-inch wide and 4 inches wide.

Make a gash lengthwise down center and slip one end through gash. Deep fry (350 degrees) about 1 1/2 minutes until delicately browned. Drain. Cool and sprinkle with confectioners sugar. Makes about 3 dozen.
