MINCEMEAT CHEESECAKE 
1 prepared pie crust
1 3/4 c. mincemeat
4 c. mini marshmallows
1/3 c. orange juice
1 tsp. orange rind
16 oz. cream cheese
1 c. Cool Whip

In double boiler, melt marshmallows and orange juice until creamy. (Do not overcook.) Chill until thickened. Beat soft cream cheese and orange rind until fluffy. Mix marshmallow mixture with cream cheese, then fold in Cool Whip. Spread mincemeat in prepared crust. Cover with marshmallow mixture and refrigerate overnight.
