|RED BEANS AND CURRIED RICE|
1 (2 lb.) roll Bob Evans sausage (hot)
1 med. can crushed tomatoes
1/2 c. dried onions
1 lg. can kidney beans
1 c. water
Red pepper flakes; optional
Salt and black pepper
Brown sausage in 4 quart heavy pot. Add dried onion, tomatoes, salt, pepper, red pepper flakes and water. Simmer 15 minutes. Add beans. Simmer 15 minutes on very low fire. Serve over Curried Rice.
Prepare UNCLE BEN'S® converted rice according to package directions. To boiling water add 1-2 tablespoon curry powder, 1/4 cup dry chicken broth, 1/4 cup butter, and 1/2 cup dried onions.
