QUICK AND EASY JAMBALAYA 
1 lb. smoked sausage
1 bell pepper
1 onion, chopped
1 can tomatoes
1 c. rice
Creole seasoning to taste

Cut sausage in small rounds. Cover 10 inch skillet and brown both sides while sauteing onion and peppers in same skillet. Add chopped, canned tomatoes. Cook 1 cup rice in 1 1/2 cups water in saucepan. Cook rice while sausage, onion and peppers are cooking. Add cooked rice to sausage, pepper and onion. Heat all together. Add creole seasoning to taste.
