HAM, EGG AND POTATO BAKE 
1-2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 tbsp. chopped parsley

HAM MIXTURE:

2 c. cooked ham, diced
2 med. size potatoes, cooked & sliced
2-4 hard boiled eggs, chopped
1/3 c. fine dry bread crumbs
1 tbsp. butter, melted

Preheat oven to 375 degrees. Grease a 2 quart casserole. In a saucepan, melt butter; blend in flour, salt and pepper. Stir in milk slowly. Cook over moderate heat, stirring constantly until thick. Remove from heat. Add parsley.

Place alternate layers of ham, potatoes and eggs in casserole. Pour White Sauce over the top. Mix bread crumbs with melted butter; sprinkle over ham mixture. Bake about 25 minutes. You may add onion, bell pepper, celery and more potatoes, depending how many servings you want.
