TUNA POTATO CASSEROLE 
4 c. potatoes (sliced uncooked)
1 can tuna (7 oz.) drained
1/4 c. butter
1/4 c. flour
2 c. milk
1/3 c. onions, chopped
2 tsp. minced green pepper
1 tsp. salt
1/4 tsp. pepper

In a greased 2 quart casserole. Layer potatoes and tuna. In saucepan, melt butter and stir in flour to make a roux. Cook and stir until smooth, and whisk in milk, stirring constantly, until thick. Add onion, green pepper, salt and pepper. Pour sauce over potatoes. Bake until potatoes are tender. Bake at 325 degrees for 1 hour.
