OLD FASHIONED HERRING SALAD 
1 salted herring
2 mellow apples, peeled
4 cooled, cooked potatoes
5 cold cooked beets
1 1/2 tbsp. minced onion
4 tbsp. vinegar
2 tbsp. sugar
1/4 tsp. white pepper
3/4 c. thick cream
Hard boiled eggs

Soak herring in cold water for 14 hours. Free from skin and bones. Cut in small cubes. Dice up beets, potatoes and apples. Toss together adding vinegar. Fold cream into salad. Garnish with hard boiled egg slices. Serves 6.
