BROWN COUNTY, INDIANA APPLE BUTTER 
3 1/2 c. unsweetened applesauce
2 1/2 c. light brown sugar
1/2 c. vinegar
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves

Combine all ingredients in an oven-proof casserole. Bake, uncovered, until mixture is thick and slightly transparent, stirring occasionally. Pour hot into sterilized jars, leaving 1/2 inch head space. Adjust caps. Process pints and quarts 10 minutes in a boiling water bath. Serves: 2 1/2 - 3 pints.
