BEEF STROGANOFF CASSEROLE 
1 lb. lean ground beef
1 (14 1/2 oz.) can chopped tomatoes
1 (10 oz.) can diced tomatoes and green chiles
2 tsp. sugar
2 tsp. salt
1/4 tsp. pepper
1 (6 oz.) can tomato paste
1 bay leaf
1 (6 oz.) pkg. medium egg noodles
6 green onions, chopped
1 c. sour cream
1 c. shredded Cheddar cheese
1 c. shredded Parmesan cheese
1 c. (4 oz.) shredded Mozzarella cheese
parsley sprigs (for garnish; optional)

Cook ground beef in large skillet until brown and crumbly. Drain. Stir in all tomatoes, sugar, salt, pepper and bay leaf. Let simmer for about 20 to 30 minutes. Cook and drain noodles according to package. Stir together cooked noodles, green onions and sour cream until blended. Place noodle mixture in bottom of lightly greased 13 x 9 baking dish. Top with beef mixture and sprinkle evenly with cheese mixture.

Bake, covered, at 350°F for 30 minutes, then uncovered for 5 to 8 minutes more.
