CHICKEN A LA ORANGE 
4 (3 oz.) chicken breasts, boned & skinned
4 tbsp. orange juice
1 tsp. grated orange peel
1 tbsp. safflower or canola oil
1/8 tsp. nutmeg
Vegetable cooking spray

Combine orange juice, peel and oil. Place chicken breasts in single layer in a baking dish coated with cooking spray. Pour sauce on top of chicken "skin" down. Bake covered at 350 degrees for 20 minutes. Turn chicken and baste with pan liquid. Sprinkle with nutmeg and continue baking covered for 15-20 minutes longer.
