JUMBO FRUIT AND NUT MUFFINS 
1 c. all-purpose flour
1/2 c. firmly packed light brown sugar
1 egg
1 tbsp. baking powder
2 1/2 c. Fruit & Fiber whole wheat/bran cereal
1 c. milk
1/3 c. oil
1/2 tsp. salt

Mix flour, sugar, baking powder, and salt. Combine cereal and milk in bowl and let stand about 3 minutes; stir well. Add egg and oil; blend well. Add flour mixture, stirring just enough to moisten flour (batter will be thick). Spoon into 6 (6 ounce) greased oven-proof glass custard cups, filling each 3/4 full. Sprinkle additional cereal on top of batter, if desired. Bake at 400 degrees for 25 to 30 minutes or until golden brown. Makes 6 muffins.
