JOSH'S BLUE RIBBON CORNMEAL MUFFINS 
1 1/2 c. flour
3/4 c. cornmeal
1/2 c. sugar
4 tsp. baking powder
1 tsp. salt
2 eggs, beaten
3 tbsp. melted butter
1 c. milk

Sift together flour, cornmeal, sugar, baking powder and salt into bowl. Combine eggs, butter and milk. Add to dry ingredients, stirring just enough to moisten. Spoon batter into greased 3 inch muffin pan cups, filling two-thirds full.

Bake in 400 degrees oven 15 minutes or until done. Makes 12.
