PERFECT CORNBREAD 
1 c. all-purpose flour
1/2 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. yellow cornmeal
1 c. milk
2 eggs
1/4 c. softened shortening or oil

Sift together flour, sugar, baking powder and salt. Stir in cornmeal. Add milk, eggs and shortening. Beat until smooth, about 1 minute. Pour into greased 9"x9"x2" pan or iron skillet. Bake at 425 degrees for 20 to 25 minutes. Makes 8 to 10 servings.
